the back of the fridge.

Not at my place, I welcome leftovers. Only in my case I use the leftovers as ingredients to a new meal.  I’m pretty certain that you can throw any leftover at me and I’ll be able to turn it into something else besides garbage.
 
One of my favorite meals is The Sandwich. To me you can’t get any better and here are some reasons why; it’s highly portable (at a party I’m easily spotted, I’m the guy with a beer in his left hand and a sandwich in the right), It contains all of the food groups and leftovers fit well between two pieces of bread. I always make this sandwich for friends when I have leftover steak.

Sliced Steak with German Cucumbers

Ingredients:
- Steak sliced thin (any steak or London broil will do and the amount depends on you)
- Bread (I prefer French bread but any roll or bread is fine)
- Cheese Slices (Jalapeño Jack or Swiss or whatever you have on hand)
- 1 pat of butter
- Lettuce
- Tomato
- Cajun seasoning (optional)
Cucumbers:
- 1 large cucumber
- 1 tsp. salt
- 1 tbsp. cider vinegar
- 2 tbsp. vegetable oil
- ¼ cup sour cream
- ½ of a white onion diced
- 1 tbsp. horse radish (optional)

First thing to do is to thinly slice the cucumber on a mandolin or with a knife.  Next add the salt and let sit for at least a ½ hour.

In the meantime dice the onion and sautee with butter until it is browned but not burnt.

After the half hour of the cucumber salting drain the liquid and add the sautéed onions, oil, vinegar, sour cream and if you like the horse radish.

Preheat oven to 350 degrees and toast your bread.

Simultaneously, quickly heat steak in a sauté pan with butter and seasonings then remove from heat. When the bread is toasted remove from the oven and pile on steak and cheese.  Return to the oven till the cheese is melted.
The last step is to pile your sandwich with the cucumbers, lettuce and tomato and of course chow down.
