ImageSince the change of seasons from spring to summer, there is also a change in tastes.  In the winter people usually prefer hearty meals, where in the summer light and refreshing items are choice.  I know for me at least I try to get out of the kitchen and into the backyard where I can...

stare into space and enjoy the weather.  So I try to cook things that have vegetables and can possibly be cooked on the grill.  Now there are the summer stables of course like hamburgers, hotdogs and of course the beloved meat on a stick but they tend to be a little on the boring side.  So why not experiment with things like grilled sandwiches, salsas and of course the blended drinks.  So this little sandwich here will fulfill all your summer eating needs. 

 

Grilled Fresh Mozzarella and Tomato Sandwiches

Tomato sliced thin

Fresh Mozzarella sliced

Red Onion sliced

Romaine lettuce

Ciabatta Bread

Salt and Pepper to taste

 

Roasted Garlic Dressing

1 tbs white balsamic vinegar

3 tbs olive oil

2 cloves mashed roasted garlic

1 tbs chopped fresh basil and oregano
Salt and Pepper taste

 

First make the dressing by emulsifying the oil and vinegar.  Then add the rest of the ingredients to the dressing.  Next preheat your grill. Then slice open the ciabatta and stack on the ingredients and drizzle on dressing.  Then place sandwiches on grill and place a wrapped weight like a brick or a bacon press on the sandwich.  Grill till crisp. Eat!!!
