prepare this white fish but I’ll give you my favorite. Of course this salsa here can go on anything but I love it like this. Grilled Mahi Mahi with fruit salsa Mahi filets 1 red onion diced 1 jalapeño peppers diced seeded & de-ribbed 1 small mango, peeled, pitted & diced 1 1/2 Tbsp red bell pepper, diced 1/2 cup honeydew, diced 1/2 cup cantaloupe, diced 2 Tbsp cucumber, peeled & diced 2 Tbsp cilantro, chopped 1 Tbsp Vegetable oil Juice of 1 lime Salt and Pepper to taste Basically just mix it together. For the mahi mahi I season with some salt and pepper and grill until flakey. Top with the salsa and EAT!!! Chef Riggio |
